Al Pastor

Description: Mexican-style grilled pork. Good for tacos or burritos.
Yield: 4 Servings

Qty Unit Ingredient
2 lb. Pork, sliced into 3/4-inch thick steaks
1 Yellow Onion (chopped)
1 c. Pineapple (chopped, with juice)
1/2 c. Orange Juice
1/4 c. Apple Cider Vinegar
3 cloves Garlic
2 tsp. Salt
1 tsp. Mexican Oregano
1 tsp. Ground Cumin
2 Chipotle Peppers (in Adobo)
2 tsp. Adobo Sauce (from Chipotle can)
1 Tbsp. Chili Powder

Directions:

  1. Combine all ingredients except pork in a blender
  2. Puree into a smooth marinade
  3. Marinate pork overnight (12-24 hours)
  4. Grill until done (should be nicely charred on the outside and tender inside)
  5. Chop meat and serve in tacos or burritos
