Chicken Cacciatore

Chicken prepared with tomatoes, onions, and bell peppers.

1/2 | Red Bell Pepper (chopped) | |
1/2 | Onion (chopped) | |
2 | cloves | Garlic (minced) |
1/3 | c. | White Wine |
15 | oz. | Diced Tomatoes |
1/3 | c. | Chicken Broth |
3/4 | tsp. | Dried Oregano |
1/2 | tsp. | Basil |
Directions:
- Cut each chicken breast in half
- Season chicken with salt and pepper
- Dredge chicken in flour
- Heat olive oil in saute pan over medium high heat
- Brown chicken and remove from pan
- Reduce heat to medium and cook onion, bell peppers, and garlic
- Add white wine and reduce for about 3-5 minutes
- Add tomatoes, broth, and oregano
- Re-add chicken
- Simmer for about 30 minutes
- Add basil at the end
