Meatloaf
Description:
A moist and flavorful meatloaf. Bakes for about 1 1/2 hours
total.
Yield:
About 8 to 10 servings.

Tomato Sauce |

Directions:
- Saute onion and red bell pepper in olive oil
- Add chopped garlic and sprinkle with kosher salt
- Remove onions, bell pepper, and garlic from heat and allow to cool
- Mix all other ingredients, adding the sauted mixture after it has cooled
- Bake at 350 F. for about an hour
- Prepare sauce (below)
- Pour half the sauce over meatloaf
- Bake for another 15 minutes
- Pour remaining sauce over meatloaf
- Bake until center is at 160 F. (about 15 more minutes)
- Let it rest for about 10 minutes, then slice and serve

- Combine all ingredients
- Heat on stovetop over low heat
- You can let the sauce cool between the first and second pourings
