Seared Citrus Scallops
Description:
Scallops seared in butter and olive oil. Serve with pasta and the lemon
garlic sauce.

Lemon Garlic Sauce |
Directions:
- Prepare lemon garlic sauce and let simmer
- Start heating water for pasta
- Pat scallops dry
- Season scallops with salt and pepper
- When the water is boiling, add pasta
- Heat olive oil and butter in a skill over medium high heat
- When butter starts to smoke add the scallops
- Cook scallops on each side for about two minutes (there should be a golden brown ring around the edges of the scallops)
- The pasta should finish cooking right about the same time that the scallops are ready
- Serve scallops immediately with pasta and lemon garlic sauce
